On a magical Spring evening, you know it’s time for something delicious, something comforting, something special.
Battered prawns, lovingly smothered with a sexy, spicy blue cheese dressing will mesmerize your taste-buds.
Using our Singleton Blue Stilton, these are easy to make, and will definitely impress your friends and family.

Spring Prawn delight serves 6.
1/3 cup of creamy mayonnaise
1/3 cup of sour cream
3 tablespoons red wine vinegar
1 teaspoon of chilli sauce (or more if you’re feeling fiery)
120 gr Singleton Blue Stilton, crumbled. (The last of the block can be crumbled over after as garnish, or quickly nibbled by the chef)
Pinch of Himalayan pink salt
Good grinding of black pepper
Chopped fresh parsley and spring onion for garnish.
1.5kg of yummy prawns, deveined, tails intact
1/3 cup of cornflour
1/3 cup plain flour plus 50g flour on a plate for dredging
1 large egg, beaten
188ml beer or soda water
1 bottle of Rieslaner Ausleser 2018 – ideal companion for your meal.
Blend all the dressing ingredients together until smooth. Season to taste.
In a bowl, sift the cornflour and plain flour together.
Make a well in the centre and add your beer and egg. Whisk until combined and leave to rest in a cool place for 10 minutes.
Use this time to enjoy a glass of our Rieslaner Ausleser, after all, the chef deserves a treat too.
Heat enough oil for deep frying.
It is ready when a cube of bread dropped in turns brown.
Put the last 50g flour on a plate and dredge your prawns.
Dip them in the batter until fully covered and carefully add to the hot oil.
Only add a few at a time to not overcrowd your wok, and to ensure even cooking.
Fry for 2-3 minutes or until crispy and golden.
Remove and drain on kitchen paper.
Serve immediately on a bed of lettuce with your gorgeous dressing drizzled over.
