For those sultry nights when you crave something tasty and different. It may seem simple, but the chilling time lets all those deep flavours combine and shine. Absolutely delicious as a dinner served with a crisp mixed salad.
You will need:
1kg firm white fish, cubed
2 tablespoons of turmeric
2 teaspoons of crushed black mustard seeds
3 large onions, sliced
250g small pearl onions, peeled
2 red and 2 green chillies, chopped and deseeded
3 teasoons of garlic
2 teaspoons of crushed ginger
Juice of 2 lemons
Small bunch of curry leaves
6 tablespoons of white vinegar
A little patience
Combine the fish cubes with half the turmeric and a bit of the mustard seeds.
Heat half the oil on high, fry the fish for 5 minutes until done, stir constantly.
In a second pan, heat the remaining oil and fry the onion, garlic, chillies, ginger, turmeric, mustard seeds.
Add the rest and bring to the boil.
Stir the fish in and leave to cool.
Cover and refrigerate for 24 hours to let those gorgeous flavours develop.
Serve chilled with rice.
Get creative and garnish with chopped parsley and decoratively cut cherry tomatoes.
