Blue Cheese – you either love it or hate it. This retro inspired recipe is for the lovers of that blue veined cheesy delight. It is a stunning starter, and a great way to celebrate the yumminess of cheese.
120g mature cheddar, finely grated
120g Blue Cheese, finely crumbled
1 cup of cream
50g chopped and toasted almonds
1 teaspoon of gelatine
2 tablespoons of water
2 stiffly beaten egg whites
Salt,pepper and mustard to taste
(Sounds odd, but the sharpness of the mustard offsets the creamy rich tang of the cheese)
Soak the gelatine for a few minutes,then dissolve over hot water.
Whip the cream until soft peaks form.
Fold in the cheeses and nuts.
Gently fold in the gelatine and egg whites and season to taste.
