For those nights when you want fast, easy and delicious, this is for you! Combining chicken, veg and cashews, this is a yummy way to get a quick vitamin-packed healthy boost.
1 1/2 kg chicken, skinless and cubed
100g cashew nuts
250g button mushrooms, sliced
1/2 cup of green peas
1 large carrots, peeled and cut into thin strips. (use your veg peeler for nice thin ribbons)
1 onion, finely chopped
1 spring onion, cut into thin strips
1 red pepper, cut into thin strips
2 teaspoons of soya sauce
4 tablespoons of mushroom sauce
2 teaspoons of sugar
2 teaspoons of cornflour
Spring onion strips and cashew slivers to garnish
Mix the cornflour with a tiny bit of water to make a paste.
Heat oil and stir fry the chicken for 3 minutes.
Add nuts and veg, keep stirring for 2 minutes.
Remove from pan, drain and keep aside.
In the same pan, add the sauce ingredients excl. the paste.
Bring to boil, add the chicken mixture and stir well.
Add the paste and stir to thicken.
Bring to boil, and you’re done!
