Everyone loves the satisfying crunch of a good batter lovingly encasing juicy chicken. This is one of those meals that children love, and makes adults feel like children again! Get your favourite dipping sauce ready…
1 kg chicken breast, cut into strips
1 ½ cups of flour
5 tablespoons of cornflour
3 teaspoons of baking powder
2 teaspoons of salt
½ teaspoon of white pepper
1 teaspoon of smoked paprika
2 teaspoons of sugar
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 ½ cups of soda water
Oil for deep frying
Mix all the dry ingredients in a big bowl.
Cover a tray with clingfilm, and keep it ready to hold your chicken fingers while raw and a paper towel lined dish for the cooked ones.
Add the soda water to the bowl, and mix to form a smooth batter.
Dip the chicken into the batter, and coat each piece thoroughly.
Heat oil to between 180*C. (A small cube of bread will brown in about 15 seconds)
Deep fry in batches until golden brown, around 3 minutes.
Drain on paper towels.
Serve with chips and a side salad. A dipping sauce always goes well with meals like these, choose your favourite or have a selection.
