Rich in Omega 3 essential fatty acids, and an excellent source of Vitamin B, salmon is being recognized as a super food. Try this easy pan fry with a fragrant, luscious lemon butter sauce. Quick and delicious!
4 salmon fillets
4 tablespoons of butter
3 teaspoons of crushed garlic
3 tablespoons of fresh lemon juice
1 teaspoon each of thyme, oregano and basil
Lemon wedges and rice to serve
In a small pot, melt the butter and add the lemon juice, garlic and herbs.
Let it simmer for a few minutes until fragrant, then remove from the heat.
In a pan, get your cooking oil very hot. It must shimmer.
Make sure the salmon is dry before cooking, pat it with a paper towel.
Carefully place the salmon in the pan, skin side down.
(If it starts to curl, just hold it gently down with a spatula. We want the skin to cook evenly)
Fish cooks very quickly, and that time is also dependent on the thickness of the fillets.
Around 3 minutes on the skin side, and 1-2 minutes on the flesh side should cook it properly.
Just gently lift and check.
The salmon is done when the fish flakes easily with a fork, and the flesh is opaque.
Serve with the lemon butter drizzled all over, and a sprinkling of freshly ground black pepper.
