Salmon is a powerhouse of Omega 3 – essential for good health. Add in their Vitamin B boost, and you know you are looking at a meal that is super delicious and super healthy. We pair this superfood with the king of vegetables, Asparagus, to bring you a quick, fuss-free dinner.
4 thick salmon fillets
1 lemon, zest grated and kept aside, and the juice kept aside
1 lemon sliced
500g fresh asparagus, trimmed
1/2 grated parmesan
1/2 cup breadcrumbs
1 teaspoon of basil
1 teaspoon of oreganum
2 teaspoons of crushed garlic
Vegetable oil to cook
Preheat your oven to 180* C.
In a bowl, add the 3/4 lemon zest, parmesan, breadcrumbs and herbs. Season well with salt and pepper.
Pat the salmon dry, and place in a prepared baking tray skin facing down.
Use a spoon to cover the fish with your crumb mixture.
Arrange the asparagus around the fillets, and drizzle with oil, making sure they are nicely coated.
Drizzle with the lemon juice, and scatter the garlic over.
Place the lemon slices around. They will delicately flavour the meal, and are very tasty as a garnish.
Bake for 15 minutes, until the asparagus is tender, and the fish is done.
Take note – fish cooks very easily. It is done when t flakes easily with a fork. Be careful to not overcook it.
