We all know how healthy spinach is – just ask Popeye! This gorgeous dish is infinitely adaptable, and very quick and easy. Perfect with any meal as a side, or even as a yummy main course added to pasta or over rice.
500 g spinach, deveined and chopped
1 onion, chopped
1 teaspoon of crushed garlic
1 lemon, juice and zest kept separately
3/4 cup of feta, crumbled
1 red chilli, deseeded and chopped finely (optional)
125 g mushrooms, sliced
1/4 cup slivered almonds for crunch
Heat oil in a deep pan, and saute the mushrooms, and remove from pan.
In the pan, saute the garlic and onion until soft. If using, add the chilli.
Add half the lemon juice and the spinach and stir well.
Keep stirring until the spinach has wilted.
Remove from the heat, and put into your serving dish.
Put the mushrooms in, the last of the juice, the zest, and mix well.
Scatter the slivered almonds over and serve hot.
